Heritage breed, Ethical farming
Dexters are a heritage Irish breed known for their small stature and superior meat quality. We grow our Dexters a little longer than the average commercial beef to enhance the deep, rich flavour and marbling of the meat. Our animals are exclusively pasture-raised, without any antibiotic nor added hormone. Out of our 200-acre farm, we have the luxury of 120 acres and 3km of frontage on the Upper Murray River, where grass stays green all year round. We believe in the harmony of nature and heritage. Each selection is a testament to our commitment to ethical farming and the pursuit of the world's most exceptional beef.

Our heritage cattle graze on open pastures and are ethically processed in small batches under strict quality standards to ensure premium health and superior flavour.
Every cut is aged for 14 days for depth of flavour, precision-trimmed by master butchers, and vacuum-sealed immediately to lock in peak freshness and tenderness.

Small scale, authentic outcome
At Bimbimbi Farm, we believe you deserve to know exactly what you eat. We raise Dexter cattle on the lush river flats of the Upper Murray at Tintaldra, Victoria. And, we process and sell beef and veal from our herd. They are a heritage Irish breed, small in size. We wanted more flavour in our beef, so we wanted animals that are a bit older than the 18 months to 2 years that you find in the supermarkets. But, we did not want 300kg of meat from each animal. Dexters grow to about 450kg live weight, about half the size of a full-grown Angus steer. Dexter cuts are naturally smaller, making them perfect for family-sized portions and standard home freezers.
As a grass-fed, natural product, it is higher in Omega-3 fatty acids, conjugated linoleic acid (CLA), and essential nutrients like iron and zinc compared to conventional beef. Leaner, it is also lower in saturated fat.
We have experimented with rose veal at 6 months old and beef from 2 years to 5 years of age. The veal is superb. The beef is well marbled, flavourful and tender, with age bringing a deep rich flavour. Our beef remains tender and juicy, even when cooked well-done.
